Born in Toluca, state of Mexico, Pablo Salas is a chef proudly carrying his origin, who was chosen to operate the new restaurant at the Westin, Fort Lauderdale. This Mexican food venue, Lona, which translates to “canvas” in Spanish, symbolizes the notion of clean slate, the canvas for his culinary creation while also referencing tattoo devotee, Salas himself. For the design of the concept, we looked at his philosophy, and extrapolated the design to represent a fresh approach to a hip, Mexican venue. Key parts of the design referenced historic great influencers of Mexican design, yet updating them to work with Salas’s concept. Design features include personalized Tequila lockers, and a Temple room dedicated to traditional Mexican pottery display.
